Zucchini Nut Loaf

Roy came over last week bearing gifts.  He brought me a large green baseball bat.  On closer inspection, I realized it was a club.  What would I do with a green club?  My imagination ran wild.

"From my garden," Roy said proudly.  He must be using the green club to beat away the squirrels.  Ah, but then I realized it was a Zucchini!  Roy had grown the world's largest green squash.  I'm set on vegetables for the next few months.  Zucchini on anabolic steroids!

For Clink & Roy, from page 58 of the Better Homes and Gardens Bread book I've had since college:

Zucchini Nut Loaf

1.5 C flour  (Clink: the "C" stands for 'cup")
1 teaspoon (t) cinnamon
0.5 t baking soda
0.5 t ground nutmeg
0.25 t baking powder
0.5 t salt
Mix the above together and set aside (dry ingredients)
1 C sugar
1 C finely shreeded unpeeled zucchini
1 egg
Beat together sugar, zucchini and egg, the add oil and lemon peel and mix well.  Stir in the above dry ingredients.  Fold in chopped nuts
1/4 C cooking oil
0.25 t finely shredded lemon peel
half C chopped walnuts

Good stuff.  And for the record, Roy hates when I exaggerate, but the zucchini is about as long as my dog, Kobe.
Turn batter into a greased 8X4X2 inhl loaf pan and bake for 60 minutes at 350 degrees or until wooden pick inserted near center comes out clean.  Cool in pan for 10 minutes.  Remove from pan, cool on rack.  Wrap and store loaf overnight before serving.  (Oh, my--- I never read that last sentence before.  I've always eaten it warm...perfect that way).

Beat the zucchini? Did you get a signed release? And what if it couldn't give consent? Would Kobe have medicated that zucchini, and would that be preferable to cooking it?

That sounds GREAT!

Yes, out of the oven is so darn good, but when a quick bread gets to sit wrapped overnight, the flavors develop and merge in ways that mmmmm are so good!

Here's my FAVORITE and it doesn't even have to be fall, it is to DIE FOR! You just have to make sure they are done, first time making 'em we took them out too soon. The texture and flavor are over the moon heavenly!

Ooooohhhh! That looks wonderful! I'm not [currently] growing any zucchini this year, but my next door neighbor got more than he could use at the produce auction, and so he gave me a bunch.
Thanks for the recipe, I am all about zucchini recipes right now! Although the first one I'm probably going to try (assuming I have cocoa powder somewhere in the cabinet) is a zucchini brownie recipe on allrecipes.com that got really good reviews.
I love all the creative recipes that result from ridiculous quantities of garden vegetables!

Thanks for that recipe link, Sarebear! My pumpkins were the first of my large cucurbits to take off, and now I've got two turning orange. I was having trouble figuring out what the heck I was going to do with pumpkins in July!

Let me know what you think, Maggie! And I'm going to be trying the zucchini one (but I might have to do the other one first cause I've got cravings for it now!)

I also have a zucchini spice muffins recipe around here somewhere that's superb!!! It might even have won an award in some magazine I forget.

If you want another pumpkin recipe, there's a Great Pumpkin Dessert I've made that is heavenly. Walnuts, pumpkin, other stuff, it sounds wierd to sprinkle the yellow cake mix over the liquidier part but it all turns out scrumptious!

I also like this recipe very much, which is more of a casserole than a bread (you make it in a 13 x 9" pan). Of course, I vary the ingredients from time to time. You can't double it or it doesn't bake thru properly.

Another way to use up the zucchini clubs!! I just peel them and take out the seeds, and a food processor will slice them very thin quickly.

the fact that your zucchini is larger than your dog proves that the zucchini is on steroids and your dog is not. ;)
